Grilling tips from the “experts”

Local citizens give their insights on what works for them on the grill

 

Barbecue season is here!

Self-proclaimed experts aim to exhibit their best grilling skills for barbecue in its best possible form. A few people with different backgrounds share their tips on how to maximize your summer grill-outs.

Indianapolis resident John Sparks’ grilling experience spans over 30 years and he says he’s perfected his barbecuing ritual. Sparks cooks for family, friends and company functions where his food is always a hit, he said. 

“My steps begin from well seasoning whatever I put on the grill — from chicken to ribs I make sure the meat is evenly seasoned and prepped for the grill,” Sparks said. “Once it hits the grill, (have) the patience to wait for the meat to cook all the way through and get the nice black coating that gives it taste.”

Tony Lockhart doesn’t quite have 30 years of grill experience under his belt, but what he lacks in experience he’s makes up with experimenting with time on the grill. Lockhart uses many techniques he’s learned from shows on Food Network, books and YouTube videos plus one lesson he learned on his own.

“I have learned that thoroughly cleaning your meat before it hits the grill may be the most important step in the process in grilling.” Lockhart said. “While seasoning and the actual grilling is important, clean meat prevents sickness and allows the meat to cook through quicker. My most important tip is to just have fun with the process and experiment to learn what you like and dislike when you are cooking and eating your food.”

Stay-at-home mom Cassidy Hadile loves the summer time because she is able to leave her stuffy kitchen during summer months for outdoor food prep. Hadile does not just grill meat, but also a medley of vegetables and found it effective and delicious. 

“Grilling season is the best for me personally because I’m able to grill all of my corn, peppers and onions to give them the extra taste that my kids love,” Cassidy Hadile said. “It’s a big hit with my family and it helps add variety to what I can prepare.”
