It’s holiday party and pitch-in season, and you’re looking to get out of your traditional meatballs and crudites rut. Well, look no further.
I’m sharing a savory appetizer that will appeal to adults and children and is sure to liven up any holiday gathering. Grab the recipe below:
Ingredients
Extra virgin olive oil, as needed
10 to 15 cherry tomatoes, halved
12 clementine segments
1/3 cup balsamic vinegar
Salt, to taste
Black pepper, to taste
5 slices bread
4 tablespoons butter
Instructions
1. Preheat the oven to 350 degrees.
2. Lightly coat a sheet pan with extra virgin olive oil
3. Toss tomatoes and clementine segments in balsamic vinegar and spread them on the sheet pan. Season to taste with salt and pepper.
4. Bake for 30–35 minutes, until softened.
5. While the tomatoes and clementine segments roast, cut two rounds out of each bread slice.
6. Melt the butter in a saucepan and toast each bread round in the butter until it’s slightly golden and crisp.
7. Top each toasted bread round with the roasted tomato/clementine mixture and serve warm.
