Don’t let that day old baguette of bread go to waste, when life gives you left over bread, you make bread budding.
Ingredients
1. 1 large day old baguette (Cubed)
2. Half Stick of Butter (Melted)
3. 1 Cup Chopped Pecans
4. 4 Eggs, beaten
5. 2 Cups Half & Half
6. 3/4 Cup Brown Sugar
7. 1/2 Teaspoon Cinnamon
8. 1+ 1/2 Teaspoons Vanilla Extract
9. 1 Teaspoon Pecan Extract
10. 1/3 Cup Milk
11. 2 Cups Powdered Sugar (Sifted)
12. Cooking Spray to Coat
Instructions
1. Pre-heat oven to 350 degrees
2. Coat a 12 count muffin tin with Cooking Spray
3. In a large bowl combine Beaten eggs, Half & Half, Brown Sugar, Cinnamon, Melted Butter, Pecan Extract & 1/2 Teaspoon of Vanilla Extract. Mix Well.
4. Fold in Chopped Pecans.
5. Combine pudding with cubed Bread and allow mixture to coat bread thoroughly.
6. Ladle pudding into muffin tins.
7. Bake at 350 degrees for 42-45 minutes until golden brown or center is set and a inserted toothpick comes out clean.
8. While bread pudding bakes, Mix Powdered Sugar, Milk and Vanilla Extract to make sauce. Whisk completely until smooth and glossy.
9. Remove Bread Pudding Minis from muffin tins.
10. Serve warm with a drizzle of Vanilla Glaze. Garnish with extra pecans.
